Callos veganos at CañadúMadeleine's Review (Feb 27, 2024)

I’ve never had callos before (any version of it) and I’m so glad this was my first experience! A generous amount of chickpeas in a thick, hearty almond-based stew spiced with either nutmeg and/or mace. The oyster mushrooms strongly resembled pieces of slow-cooked beef- I just wish there were more than two of them in there! This has inspired me to try and recreate this for my family back home in Australia.
