One of the vegan dishes newly added to the refreshed regular menu in 2024! 🍱 Featuring eggplant 'unagi', though I personally found it a bit of a letdown, as it was too firm and the skin was slightly tough to chew. Perhaps it could have been cooked to a softer, fork-tender texture to better resemble 'unagi'! 🍆 (And perhaps the portion of eggplant could have been bigger; I got half an eggplant while the menu picture seemed much more generous nuuuuuuu 😭) The bed of brown rice was slathered in miso paste that was a tad too salty for my liking. Served with creamy guacamole, fresh broccoli florets, as well as sprinkled with sesame seeds, nori seaweed, and green onions. 🥑🥦 Overall a healthy grain bowl albeit not particularly outstanding in my opinion.
