Fresh Salad: 2nd course at Harvest Beatsofihuasteca's Review (Feb 4, 2024)

First time trying Harvest Beat in #seattle. This #allvegan #finedining restaurant has a changing #tastingmenu based on #seasonal #local produce. The menu changes every 4 weeks. It is about $130/person so on the expensive side but it is an experience in itself with the wine or elixir pairings. You eat all courses at the same time as everyone else in the restaurant.

The first and second course were plated together (soup and this #salad).
This #citrus salad consisited of #roasted #couscous (which made it a tad crunchy), roasted rainbow #carrots, #honeycrispapples with a carrot #hempseed #vinegrette.
This was very good, I love the variety if textures, the slight tanginess from the citrus and the flavors. It was a tad bitter (from the greens) but that is expected when using this specific greens.
