Baked Eggplant Rollatini & Vegan Ricotta

This doesn’t look like much. But it was delicious!  Served on marinara sauce, which worked really well. Am not a huge fan of eggplant. Unless it’s prepared well. And this was. 😊 
This was part of the 7-course dinner.
