Vegan Banana Oat Coconut Cookie

This cookie was fun to try! It's like a hybrid of banana bread and a macaroon. The banana flavor is the strongest, but then there are coconut flakes throughout the cookie. I wasn't a big fan of the texture of the coconut in this cookie. I did really enjoy the flavors together though. It was a nice tropical break in January!
