I love keeping a jar of sundried tomatoes on-hand! This time, I specifically got these for the oil. I used the oil to flavor a caprese pasta salad instead of using regular olive oil (3rd pic). I used the actual sundried tomatoes to make spicy sundried tomato casarecce (2nd pic). Sundried tomatoes make such a nice sauce that gives you something a bit different than a traditional tomato sauce would. I also love the texture of sundried tomatoes chopped up small.
