Nobody wants to see my nasty, sticky bottle of Molasses when other users have posted new pretty bottles on here! But this is what I made with it. 😁 I have tried several brands of Molasses over the years. Some are better nutritionally, while others are better for baking. This brand has both. I also like to add Molasses into oatmeal for added iron. This time of year is #gingerbread time, and that calls for a good robust Molasses. I love the flavor of this. It's not super strong, but it's still very dark and rich in color. I use varing amounts in my cookie recipe to help achieve better color. I like that this brand is #organic and #fairtrade. I purchased mine at Whole Foods for about $7.
Ingredients:
6 cups of Bob's Red Mill flour
1 tsp baking soda
1 tbsp cornstarch
1/2 teaspoon baking powder
3 teaspoons ground ginger
3 teaspoons ground cinnamon
1 teaspoon ground cloves
1 teaspoon finely ground pepper
1 1/2 teaspoons sea salt
2 sticks Earth Balance butter (at room temperature)
1 cup Wholesome brown sugar
2 servings of Bob's egg replacers
1 cup Wholesome molasses
Instructions:
-Combine flour, baking soda, cornstarch, baking powder, spices and salt in a large mixing bowl and set aside.
-With an electric mixer, combine vegan butter and sugar in a separate large bowl. -Mix in egg replacement and molasses. Add in dry ingredients; combine until dough forms a ball.
-Refrigerate until cold, for about an hour. The dough will firm up so you can easily roll it out and cut out your shapes using your cookie cutters.
Once chilled:
- Preheat oven to 350 degrees. Roll out dough on a floured work surface. I like mine a little thicker. They decorate easier and are a little softer. Then cut away. I used @wiltoncakes snowflakes
- Place cookies on to lined baking sheets, spread them about two inches apart.
(One trick I use is to put the cookie cutouts {on the tray} in the freezer for a couple minutes before putting them into the oven. They firm up quickly, and it stops them from spreading too much and losing their shape while baking.
-Bake for 12 to 14 minutes. Let cool before decorating. They’ll firm up more as they cool, so if they're a little soft, no worries.
