Review of Parmesano (Veganized) at pintXÓ - pinchos - El Cotillo by danielgl
This layered version of #eggplant #parmesan consists of eggplant slices covered in panko and fried, locally produced vegan cheese and a tangy tomato sauce. The eggplant was a bit undercooked and therefore tough, which was the only gripe about this otherwise creative dish. The cheese is firm and tasty similar to mozzarella, and the tomato sauce was the star performer, very rich and flavorful! Priced at 10€, remember to ask for it to be prepared with vegan cheese!
