Cashew cheesecake coated with a chocolate shell. 🧀🍫 Loved that the filling wasn't too sweet but was still fragrant as it was infused with a warm spice blend including nutmeg, cinnamon, clover, and ginger. Impressed by the texture - lusciously thick and creamy, neither too soft / 'melted' nor too firm / dry / grainy. My non-vegan companions (one of whom doesn't like nuts and one of whom is particular about cakes) praised this and even asked if there are cashew cheesecake recipes online.
