Cabbage? As an entree? It works! This jazz club's menu is very clearly chef-driven. This dish especially showcases the thoughtfulness and creativity. The menu lists legume purée, miso, and southern furikake. I think the thought behind this dish was to be somewhat of a fish-like dish. The cabbage texture pulled apart in layers like some fish would. The miso and furikake gave it those tastes I associate with seafood, without making it overtly fishy. The furikake was a really good idea and gave the dish some crunch that I appreciated. The star for me though was the legume pureé! It was a really delicious and savory addition to the dish. I actually liked the slightly grainy texture and the taste of the legumes.
I wish I was able to get a better picture of this dish, but you can only do so much in a jazz club! This dish was $24. Paying that much for cabbage is a bit ridiculous, but the thoughtfulness and venue can justify its higher price.
