Review of Lasagne at Genesis Vegan Restaurant by xinru-t

Probably the most popular menu item at Genesis Vegan, glad I finally got to try it! Indulgent savoury lasagne made using nutritional yeast, cashew sauce, tomato sauce, mushrooms, carrots, and brown lentils. I was pleasantly surprised by how good it tasted, moist and umami, not meaty per se but kind of like having cheesy vegetable stew layered between soft pasta sheets. Really appreciated that it was made using natural ingredients, because I'm not a fan of the gloopy texture that vegan processed cheese tends to have. Served with a side salad consisting of pea sprouts, shredded carrot, red cabbage, and lettuce to balance things out. Would recommend this!
