I had such a fun time at the Fairly Dusted Drag Show at Fair State with a full vegan menu from Root to Rise! It's so great to see veganism, LGBTQ+ artistry, and a unionized business come together for a great brunch.

You wouldn't think pasta would be a good brunch option, but the butternut squash brought a sweetness that made it feel so right! The giant shells were piping hot and stuffed with a super creamy mixture of squash and cashew ricotta. They drizzled something over it that I think is agave or some type of syrup. It added to the butternut squash sweetness and was a surprising but welcome addition. The few little arugula leaves are more for a garnish, but added a nice peppery freshness. I do wish they added a bit more. The dish came with four shells, making it very easy to split with @jonok. I'm hoping to go to more events like this with Root to Rise!
