I’m so excited about the continuing release of new vegan options at Trader Joe’s. This one particularly caught my eye as I love mushrooms and it would be lovely to have a vegan creamy mushroom soup on the market.
Unfortunately I found this soup to be lackluster and a bit confusing. I was leery when I saw the calorie count of 170 for the container - one would expect a creamy soup to have more calories. It does contain coconut milk but the consistency is between brothy and creamy.
The mushroom, carrot and kale pieces are very nice. I do not feel as though the soup was really seasoned that well, though.
Between the “creamy” soup not being totally creamy and the flavor being underwhelming this felt like a recipe that began but wasn’t finished.
I’m probably a soup snob, but when I find a soup in the fridge section my expectation is that it shouldn’t need any doctoring except maybe some pepper to taste.
Not bad, but not satisfying.
