
These were good to have on hand as a standby meal but, if you’ve got time, homemade falafels or rissoles are tastier. These falafels are made with chickpea, apricots and sultanas so they have a pleasant natural sweetness. Falafels are dry so it’s good to have a sauce to go with them. Vegan yogurt and mint works well for me, but chutney or ketchup will do the trick too. They are high in fibre and just need 10 minutes in a medium oven to heat up.
