I'm a big fan of this tofu and eggplant dish ◻️🍆

It's loaded with lots of eggplant, onions, bell peppers, and big chunks of tofu. 

I ordered takeout but the portion is so huge that I had leftovers for lunch the next day 🙌🏼💃

This was my first time trying Chef Kenny's Vegan Asian Cuisine and I will definitely go back especially to try the sushi 😋

That looks amazing! If you season/marinate tofu well it usually tastes as good as the dish since it doesn’t have much flavor on its own lol 😆😋 Yum!!!

The sauce and veggies definitely enhanced the flavor of the tofu. It was so yummy 👌🏼😋
