Roasted Eggplant at Jardin — Iszy's Review (Sep 6, 2022)

This was a beautiful medley of veggies! It has a hearty serving of saffron couscous, seared heirloom tomatoes, roasted carrot, blistered green beans, and roasted eggplant with chermoula cream. I haven't had couscous in so long, it was so good to be eating it again. I'll have to buy a bag for home and make it more often. All the veggies were yummy and seasoned wonderfully. The skin of the eggplant was tough to eat in some places, but the flesh was tender and delicious.
