Review of Chik’n and Waffles at Cornbread Cafe by knorthway

I can never visit Eugene, Oregon without visiting Cornbread Cafe. I am honestly just so thankful they’re still open and have outlasted the worst of the pandemic. They’ve changed a lot since I last visited, in order to stay afloat I imagine. They no longer have servers and instead have counter service for ordering. They’ve also changed their hours—now opening much later at 11am. Because of this schedule change, the’ve condensed their breakfast menu to 4 entrees, but breakfast is still served all day, along with their lunch & dinner items.
Their Chik’n & Waffles includes 3 pieces of breaded, deep-fried seitan served atop a big, fluffy Belgian waffle. You can choose between country sausage gravy or brown cashew gravy, and I opted for the brown cashew gravy. If you’re in the mood for a peppery breakfast gravy, go for the country gravy. Both are really good! The gravy was served on the side along with maple syrup, so you can pour them on top however you’d like. 🧇 🍁
The only thing I would change about this meal is having real silverware. I ate at the restaurant and noticed they were giving all of the diners plasticware. If they’re going to wash all of the plates and trays that food is served on, I don’t see why they couldn’t utilize and wash real silverware, too. Limiting single-use plastic should always be the goal, and especially at a vegan restaurant.
