

This vegan eggplant parmesan sandwich featured crispy eggplant, arugula, almond burrata, marinara, basil hempseed pesto on focaccia. Beautifully presented, packed with umami. The portion of sandwich wasn’t big but this was surprisingly filling. Focaccia was well-toasted but slightly on the hard side. For some reason the eggplant reminded me of real chicken… would be really curious to know if anyone else felt the same!
