Hollywood Scramble

The Hollywood Scramble is named after a street/neighborhood in Portland, Oregon.
This dish contains tempeh, sweet potatoes, mushrooms, and kale. It is all slathered in chickpea miso gravy and served with a bread slice of your choosing. I never liked traditional gravy but I love this vegan gravy! It is spiced just right and has a pleasant consistency. I wish the sandwich had a tad more kale but that is a small nit.
