Spongey as it's #glutenfree but I don't mind the texture as it's easier to eat. Do personally wish that the icing on top was sandwiched in the middle so it's more even and balanced with each bite 😂

that is the benefit of filled cupcakes, a better icing:cake ratio 🔬
I’ve seen people do just that….they slice the bottom inch off their cupcakes and place that on top of the icing, thus sandwiching in the icing between two pieces of cake🧁….genius idea 💡👏🤩
