Review of Vegan Enchilada Casserole - Trader Joe's by jackz95

The vegan enchilada casserole tasted really great (better than the ones I try to make). It was a good helping of tomato sauce, beans, corn, and vegan cheese. Once again, the cheese doesn’t really melt. Your mileage may vary as far as the cooking instructions go. I had to cook it in the microwave for a few minutes longer in order for the meal to fully defrost and cook. #veganisnotscary 30/90
