Soyamigo

I have always loved this Soyamigo brand, they have several versions of soy products, ready to prepare just to add a bit of water to the mixture and wait, then use it in several dishes. Soy again is super versatile 😻

Here we prepared probably the best “torta de milanesa” that I have ever eaten 😋
In the center of Mexico you will find a lot of small business buying this type of “tortas”
But definitely this vegan version is 1000% better 👍🏽
A quick #nerdyfact this type of bread that we used to prepare tortas is called : “telera” and it is a basic one is Mexican cuisine, together with a similar one called: bolillo.
You can use it to prepare tortas filled with so many different dishes
A similar but smaller bread is used to prepare “pambazos”

This bread has few Ingredients : wheat flour, yeast, salt and water —no question is a vegan bread 😀
A fun fact about telera is that in the center of Mexico is very common that in the mornings people are used to eat “torta de tamal” 😜 yes a tamale inside this type of bread 😆
it is the breakfast of a lot of people —of course NOT a healthy choice but for some reason the combination fits well 😉

abi88 Is it because is consider highly processed? The thing is that soy is super useful and versatile. The beans need to be heated (eliminating the trypsin) compound that is helpful for the grains against herbivores but not good for humans so a heat process needs to be done first eliminating a lot for this enzyme. Followed by an oil extraction process (first final product). The remain byproduct is the soy protein which is compress up to form the texturized protein, nuggets or whatever other form - these second product is super dry then the need to add water previously to its use. In Soyamigo into the texturized soy protein they add wheat protein, amaranth, oats and spices just to give a better texture and flavor. Texturized soy is consider highly processed due to the fact are necessary processes in order to leave the soy protein available oil free and trypsin free 😉, I think soy should be consider a #lowwaste product. It’s even more processed than I thought😱 This reminds me of dou zha (a byproduct of making tofu and soy milk), which probly doesn’t have as much protein but is less processed. abi88 I really hope that globalization gives us much more products from around the world 🌎 Once I prepared soy milk from beans — it’s a pain 😅 boil two times - remove the water (trypsin content) then blend and filter add sugar or vanilla or cinnamon — then I had a lot of byproduct that I used to prepare cake but it was too much 😅 1 likeReply
