Love the scramble part of this dish - the tofu is wonderfully seasoned and it tastes great. The bread isn't as pleasing though. Think it's sourdough, possibly gluten-free, and it doesn't quite work with the rest of the dish. A lighter, less sour bread would probably work better. #veganin2020
