This traditional cold noodle dish from Viet-nom should be everyone’s go-to when the weather is too hot and humid, and the last thing you’d want to eat is a pho’king hot bowl of pho. There’s a lot going on in this beautiful bowl of rice vermicelli noodles pho sure. It’s surrounded by fresh herbs+veg, crushed peanuts, pickled daikon+carrots, and crispy deep fried spring rolls but the contrast of flavors and textures when mixed together with the sweet spicy “fish” sauce will absolutely take you down to flavortown.
