Truss tomatoes are rich in vitamins A, C, niacin and lycopene. They contain potassium, manganese and dietary fibre. Wonderful lightly fried in extra virgin olive oil in a skillet pan. Add a dash of cayenne pepper and serve on dairy-free wholemeal toast.
