This would be a 5 star dish if it wasn’t for the deep frying (as eggplant absorbs oil like a sponge) which lowers the rating for nutrition lol! Crispy on the outside; soft and tender on the inside which almost melts in your mouth. The mince on top (texture really similar to mince meat) were really yummy too, not too sure what it was I didn’t bother asking as this restaurant is 100% vegan haha.
