We returned to have brunch at this hip coffee lab/bar, and I am reviewing this dish again as they had vegan tuna this time. Wow what a difference from the no-salmon! It had a nice sea and salt taste, lovely thick slices and the flavor was stunning. The garnishes added to this delight, vegan pesto drops, chili pearls and dijon mustard with a generous sprinkling of sesame and seaweed. This new place in town includes several creative vegan options on their menu! This dish of vegan salmon (they were out of no-tuna) sashimi had a texture that was spot-on, and just lacked a bit of "sea" flavor, but that did not deter us from devouring it!! The dijon mustard, vegan pesto, and spicy chili pearls gave fun taste options to pair with the sashimi. The guys who opened this spot are super friendly as are the wait staff. The vibe is somewhere between chill, skate and rocker, the décor follows the Triton theme under water - definitely a place we will be revisiting.
