My word. I haven’t had creamy, fresh pasta like this since going vegan! The menu describes this heaven-in-a-bowl as: ‘…fresh pappardelle with earthy mushrooms and luxurious truffles in an incredibly rich cream sauce that’s hard to believe is plant-based.’
It was indeed very hard to believe it was vegan!
The cream sauce was a perfect consistency- not too runny and not gluggy- and the pappardelle was perfectly al dente and actually tasted like fresh egg pasta.
It was perfectly seasoned with just enough black pepper, parsley, and salt to enhance the truffle and mushroom flavours without it taking over. I had to get a spoon to scrape the bowl clean. I would have licked it straight out if it were socially acceptable. 😇😇😇 Comforting. Rich. Creamy. Heaven. No wonder it’s Funghi e Tartufo’s signature dish! The other pasta dishes here looked amazing as well, like their risotto, gnocchi, and carbonara. I shall definitely be back for those…
