It's been such a long time since I've had sun-dried tomatoes that I'm surprised how delicious they can be. I used this in chickpea "meatballs" and it worked wonderfully well.

Savoury pancake made with sourdough starter discard and packed with spring onions . No dairy, zero waste! 💚 Texture was a little gummier than i’d have liked but the crispy exterior and all that spring onion goodness saved more

Hubby’s economy rice with the standard white rice. Top up 50cents for brown rice. We both enjoyed the tender spinach 😋

A hearty meal of 4 selected vegetables + brown rice. The veggies were delicious and I appreciated that they were nicely seasoned and not drenched in oil. Very good portion of rice! Top up 50cents for brown rice.

Herbal Essence has a series of botanic/fruity theme shampoos with attractive packaging. The ‘Volume’ shampoo here comes with a lovely, intense aroma. However, it is just a little drying for my treated hair.

🍫Cliff Bar’s Chocolate brownie energy bars had come in super handy for my long hikes at the Japanese alps last year.⛰️ The pictures here are of the mini version at 28g per bar.

My latest experimental bake: Grain-free dark chocolate cake with sweet potato frosting. The primary ingredients were black beans and cocoa powder.
Given that that my first attempt ended with quite a squishy cake, i’m glad more

windgal There you go! Here’s my recipe below. I modified the non-vegan recipe from https://www.thepancakeprincess.com/flourless-black-bean-chocolate-cake-gluten-free/#recipe ). My recipe has way less sugar (which is not for everyone), and uses an airfryer since I don’t have an oven (you can refer the bake instructions in the link)!

windgal Healthy dark chocolate fudge cake

<Black bean cake mix>
• -Black beans: 1 can (15 oz)
• -Brown sugar: 2 tbsp
• -**flax eggs: see below
• -oil (I used rice bran oil): 2 tbsp
• -vanilla extract: 1 tbsp
• -lemon juice: 1 tsp
• -cocoa powder (dutch processed): 5 tbsp
• -almond flour: ~5 tbsp (or until batter is scoopable)
• -baking powder: 1 tsp
• -baking soda: 1 tsp
Blend to puree.

Bake.
Oil a 6-inch round pan.
Bake 170oC, ~25mins in airfryer. Let cake cool. Prepare frosting.

**Flax eggs (makes 4) :
-Flaxseed meal: 4 tbsp
-Water: 10 tbsp (~150mL)
Mix, let sit for ~5mins.


<Sweet potato frosting>

Blend to a smooth mixture:
-Cooked sweet potato: ~130g (I steamed mine)
-cocoa powder: 1.5 tbsp
-maple syrup: 1 tbsp
-coconut oil or rice bran oil: 1 tsp
-vanilla extract: 1/3 tsp
-salt: pinch
-oatmilk: ~7 tsp or until mix is “spreadable”

Spread frosting on cake.
Chill cake, serve cold!Reply
