Spinach is an extremely nutrient-rich vegetable. It has high amounts of carotenoids, vitamin C, vitamin

K, folic acid, iron and calcium. It has many important plant compounds that can improve health, including lutein, kaempferol, nitrates, quercetin and zeaxanthin. Great lightly heated in a skillet pan with a touch of extra virgin olive oil and garnished with rosemary. Avoid if at high risk of kidney stones, as spinach is high in calcium and oxalates.
