Vegan Lemon Raspberry Cupcakes

🇺🇸🧁 I’ve seen reviews for this #bakery for years and drooled. Apparently they are not solely vegan but have many #veganfriendly products you can find in the US grocery stores. My mom picked these #lemon 🍋and #raspberry #cupcakes. #berrylover The artwork and cupcakes are so pretty! There is raspberry frosting inside too which was a surprise but they were really nice and #omnivoreapproved. My mom couldn’t tell they were vegan. The cake was moist and it’s all sweet of course. I wonder if they can improve the recipe as it’s so bad on Yuka. It has palm 🌴oil too, boo. I’ll poke. It’s a #bcorp so more deserving of our hard earned dollars and #kosher perhaps? It has a KSA Dairy symbol which is a new one for me that’s connected to kosher. It feels like a real luxury to be able to pick up something like this at a normal neighborhood grocery store. The US supermarkets are very vegan 🌱friendly in my experience this trip, perhaps more so than the UK. 🇬🇧 The normal restaurants probably less so. Pretty lemony, with too much frosting for my liking. But not bad, just a bit of misproportion to me. #veganisnotscary

If you’re a fan of lemon desserts you would absolutely love this. I really liked the raspberry icing with sprinkles.

We got these cupcakes for a party, really like the Vanilla but the Lemon Raspberry is more unique and really good too. We get these a lot for celebrations, it’s our go to. Very much recommend

Rubicon can never do wrong in my eyes! Super delicious, fluffy and moist. And you can actually taste the lemon. Quite a bit of sugar, though, but it is a cupcake after all. 😄
