I finally got around to trying Hodo’s egg-scramble last June, after they discontinued selling their Yuba noodles at the Whole Foods and Targets near me 😢. It is firmly packed in Hodo’s typical heavy plastic container. After I emptied out the contents, I needed to break it apart and mix it before it resembled anything close to scrambled eggs 🤨. The taste was okay and the texture was soft. On a subsequent occasion, I cooked it with some sautéed onions and salt which helped a little bit. I know that other companies have a more eggier flavor for their egg substitutes. I wonder if adding some kala namak could help the flavor a bit, but honestly, I felt it too mushy to me for scrambled eggs. I was really surprised that Hodo didn’t expand their Yuba line instead, as it’s an original product (no one else is really making it), and tastes delicious. Unfortunately, I can’t say the same about their eggs. Each box has about 2-and-a-half 3-ounce (85g) servings. Each serving will give you 110 calories from 3.5g of fat, 7g of carbs (4g from fiber!) and a whopping 12g of protein. It is currently listed at Whole Foods for $7.99, and at MOM’s Organic Market for $6.99, and at Acme Market for $6.49. Last year, I purchased this from Whole Foods for $6.99.
