when i saw these on the shelves i was dying to try them! checking the ingredients to make sure there was no sneaky milk powder was so scary, i was so worried i couldn’t veganize them…. but thankfully i could! instead of eggs, i used bob’s red mill egg replacer. definitely a good choice, and the pancakes worked out pretty well! the color is beautiful when you first mix the batter, but cooking the pancakes definitely muted the color. it wasn’t terrible or anything. i was just a little sad to see the vibrant purple go away. the texture of these pancakes is rather thick and chewy, and they’re packed with a sweetness and the flavor of ube. yum! they were delicious; however, i think i had a few too many because it felt like the mochi pancake dough formed a ball in my stomach 😭 i’m also not sure if i enjoy these more than regular pancakes, and i’m honestly not sure if i’d purchase them again even though i had a ton of fun trying them. i thought the texture was unique and interesting to eat, but it wasn’t something i would rave over. either way, these are definitely worth at least one try! #pancakes #veganpancakes #traderjoes #vegantraderjoes #ube #mochi #veganmochi #sweettooth #veganbreakfast #purple #sweet




I #yam so glad I was finally able to try this seasonal, ube-flavored mix! It sold out almost immediately last summer, so I made sure to grab a box as soon as they hit store shelves this year. Reading through past reviews, it seems like almost any egg replacement will do the trick; I prepped my batter using a powdered egg substitute (similar to the one from Bob’s Red Mill) and vegetable oil. The resulting mixture was pretty thick, and I ended up increasing the water so it’d be more pourable. As you can see, it’s also gorgeously purple (colored with vegetable juices.) I’m definitely biased since I’ve never really liked #pancakes, but I think this mix is best in waffle form: if timed correctly, the center will still retain its elastic, mochi-mochi glutinous rice chew while the outside crisps up beautifully. Sadly, the hue becomes a bit muted with cooking. #waffles resolve the issues of sogginess and stodginess that can arise with pancakes, and they’re a sturdier base on which to stack your toppings, too. I went with fruit, which is simple but never out of style. Syrup is not necessary, as the mix is already infused with a mild but noticeable sweetness. If you grew up with ube, you may be disappointed with the depth of flavor, which is pleasant enough (sort of vanilla/coconut) but not especially identifiable as the root vegetable. Overall, this is a fun, desserty, and extremely photogenic treat for special occasions, like weekend brunch. At $3.99, it’s also pretty affordable — but supplies are limited, so best not to dawdle!



These are really fun pancakes. The ube imparts a deep sweetness that doesn't immediately hit your tongue. The texture is chewy like mochi which was really interesting. I used chia seeds for the egg and that added an extra layer of texture. I had to add much more water than the box suggested because the chia seeds absorbed so much. These are a fun novelty but I wouldn't say I like them more than traditional pancakes. I do really love the beautiful lavender color. #glutenfree #breakfast #pancakes #mochi #ube
