Eggplant Hummus

A great afternoon snack. Paired this with TJ’s crackers.

I went through a phase of eating this all the time 6 or 7 years ago and I burnt out on it at the time. Sad I slept on it for so long, though, as it is so delicious! I’ve tried other oil free hummus varieties along the way but they always seem lacking. This one is just *stunning* with the right amount of tahini and a rich flavor. It may not be as creamy as others but there’s no lack of flavor. Even if you don’t think you’re an eggplant fan I suggest giving it a go.

This is a great hummus, plus no added oil! Very good texture and flavor. Good as a dip for cucumbers and other veggies. Great as a spread on sandwiches too.

So good!!! I like to eat it on a warm pita. Definitely getting it again

Good, don’t really taste eggplant but it’s a nice creamy hummus
