One of my favorite things to make for lunch is a chilled soba noodle salad.

I'm not familiar with this company but I grabbed these noodles bc they're #organic. These turned out great, 3 mins in soft boiling water then rinsed in cool.

The veggies I added were Broccoli, Cauliflower, shredded cabbage and carrots. Grated ginger and garlic with Sesame oil, tamari soy sauce, lime juice and diced jalapeños for the sauce. Topped with fresh Cilantro and toasted Sesame seeds.

Oh! And Tofu!

Love soba noodles, hot or cold. I do not know much about this brand, I

picked this up since my local grocer was out of my usual brand. They are US based and I like the fact that these are organic. Taste is similar to other brands I've tried, I would buy them again. They were a little over $3.

Cooked with shallots, mushrooms and spinach in a ginger, Sesame oil, rice vinegar, coconut aminos sauce. Topped with fresh cilantro and Sesame seeds. Hot tonight. Cold leftovers tomorrow 😋
