Making a super satisfying dinner is so easy with this enchilada sauce! It's medium heat, so it has a slight spiciness to it. I think it's pretty perfect as is, but there's definitely room for some hot sauce. All you need to do with this sauce is roll up your fillings into tortillas, pour a bit of sauce on the bottom of a casserole dish so the enchiladas don't stick, snuggly fit the tortillas in the dish, then coat them in the enchilada sauce! I baked mine at 400°F for 35 minutes. I topped mine with Violife Mexican Shreds. After they're out of the oven, I then topped mine with cilantro, lime juice, Kite Hill sour cream, salsa, and Cholula for extra heat. #enchiladas #mexican #vegancooking #veganrecipes #vpantry #easymeals #spicy #tomatolover #beans
