So it was raining today and I wanted some comfort soup. I had vegetable broth,
soybean paste and shitake mushrooms in the fridge but also wanted something meaty to be added into the soup. And this was just perfect for it. I sliced the tofu tempeh and then popped into the air fryer. Just so it would have firm structure and will not end up being soggy or would easily disintegrate. Also sliced the mushrooms and popped them into the air fryer (good move here btw). I liked how I can feel the tempeh in the tofu, made it feel sort of meaty. This is my third time purchasing this but first time adding it to a soup dish.
