I was just craving something simple for lunch today (so simple, I even forgot to add the shiitake in my fridge…) and settled on koya-dofu soup. Koya-dofu (or kouri, as it’s called here) is a type of #japanese #tofu that has been #freezedried. This makes it lightweight, portable, #shelfstable, and delicious! #tofulover I included a “before” photo (last image) so you can see how the blocks do grow somewhat after being boiled. I would highly recommend rehydrating them in some sort of broth, as they soak up the flavor of whatever they’re cooked in to a greater extent than almost any other #soy product I’ve tried. Regarding the texture, it’s sort of like how I’d imagine eating one of those soft, dense makeup sponges would be. I know it doesn’t sound appetizing, but I really love it! It has a meaty chew, similar to frozen tofu (冻豆腐,) only even more spongy and consistent. I think this bag was roughly $6 at Nijiya. It doesn’t seem like a lot of food, but by soaking up liquid, the weight increases several-fold. I was quite full with a half-dozen blocks in my bowl. I definitely recommend trying freeze-dried tofu; it’s great (and super #lazyvegan-friendly, too!)
