I used to buy their non-vegan pancake mix when I was still vegetarian because I liked that they had more protein than a regular mix. So glad they have a plant-based option now! These were yummy with some maple syrup drizzled on top:) This was the first time I've made them, so I think there's room to perfect the ratios to make it fluffier. Consistency/texture was still nice though! I also like that you can adjust the add-ins depending on what you want (you can use water or add plant milk/vegan egg if you want different macros).


While I personally don’t really care about my pancakes having protein, I guess it’s kind of nice. I just like it for the ease of being able to just add water. But I do think it has kind of a weird (and I don’t mean bad, I just mean a little different) taste, whether from the pea protein or something else. In this picture, I added a little bit of sourdough starter to them, but I’ve also made them just with the mix and water and they turn out similar (although maybe a little less crispy edge?). I like to add a tad more water to the batter than the recipe calls for. All in all, a solid pancake mix.
