This was the perfect protein to add to my cozy gnocchi soup. The sausage seasonings permeated throughout the soup and made it so flavorful. Usually I'm not the biggest fan of sausage, but in creamy Italian soups it's perfect, especially this gnocchi soup. These brown up really nicely and have a nice texture that isn't too tough. It's soft enough to crumble up, but I like to keep the full slices so it's about the size of the gnocchi. It's amazing that just one sausage has 25g of protein! A bit high in sodium, but that's what makes it so tasty and perfect for soup.
