I don't come across orecchiette often, but I always like trying less common pasta shapes, so I picked it up when I saw it at Whole Foods. These little pasta disks get their name for the Italian word for "little ear". It's thinner in the middle than it is around the edges. These are a cool shape, but I found them a bit difficult to get on a fork and eat. They also end up being very compact since they can stack on top of each other, so it feels easier to over serve myself with this shape compared to others. I don't think I'll be reaching for this pasta variation too much. Orecchiette is typically served with a tomato sauce. I decided to just cook down some tomatoes I had lying around with sauteed onion and garlic. I cut the tomatoes into small cubes and let them simmer down with the lid on while the pasta cooked. It helped release the tomato juices for a very light sauce. I added Italian seasoning since I didn't have fresh herbs. This dish would have been better with fresh basil! Some Trader Joe's parmesan helped finish the dish. #pasta #orecchiette #tomatolover #tomato #vegancheese #vegancooking #veganrecipes #ditchdairy #onion #garlic #italian
