This could be one of the strangest vegan gnocchis I’ve ever had, and I’m all here for it. What makes them strange is that they were bought in the frozen aisle from Costco, yet the ingredients were surprisingly simple and natural (made less surprising after reading they were made in Italy and not the US or Australia who would ultra-process the hell out of these as soon as the words ‘vegan’ or ‘frozen’ entered the chat). Another strange thing is that you don’t boil them, but roast or fry them! It was just as well I read the packet properly at the last minute, because I had a pot of water boiling ready to go! So, I popped them in the air-fryer for 10 minutes from frozen just like it said and they puffed up slightly. I then stirred them through a tomato-based sauce I made and it was done. The flavour was mild and hinted at cauliflower. The texture though could only be described as being very similar to soft mochi but without being gluey, which I found actually quite pleasant. Because they are made of mostly cauliflower though and not heavier potato and wheat, it’s very light and not as satiating and heavy as more traditional gnocchi. All in all, strange but delightful!
OM Goodness. How can something so simple be so darn good. I've fallen in love with cauliflower all over again because of these little bundles of deliciousness. Will make a very special Valentine's dinner in just a few minutes. Comes in a massive bag, so plenty left for brekkie😉. Enjoy❤️
