Usually I'm happy using chia seeds for my egg replacement. This weekend however, I was
baking cornbread to bring to a chili potluck with my non-vegan family. I like the texture of chia seeds, especially in pancakes, but for this cornbread I wanted it to be really traditional, showing them that sometimes vegan versions of some things can be indistinguishable from the non-vegan version. This egg replacement was super easy to use! Just one tablespoon of powder in two tablespoons of water equates to one egg. I added it to my Trader Joe's cornbread mix and they came out perfectly! They were a hit with vegans and non-vegans! The cornbread was incredible with Mad Hare Vegan honey.
I was prepared for this product to be pretty expensive, but I was pleasantly surprised to find that it was under $6 for this bag that will last me a long time! That sounds a lot cheaper than chicken eggs to me! Cheaper than chia too!
