I'm glad Target carries arborio rice. Sometimes it can be hard to find! Risotto is such a fun dish I forget about. It takes a bit longer to cook than a pasta dish, but it's not hard, it just requires a bit more patience. I really enjoyed finding a use for golden beets from The Good Acre. This risotto was taken from good to great with truffle chèvre from Rebel Cheese! And it seems like all risotto is best topped with some sauteed asparagus.
