As always, another success from Amy’s! The big sweet potato chunks were my favorite (unfortunately not pictured here, the served dish is cropped out.) Plus, a great coconut, strong coconut flavor... there’s enough sauce in there it could be bulked up with just some added rice.
I liked this so much better than I thought i would. The flavor is great and I liked all of the components together. #veganisnotscary
