Vegan Kale, Cashew & Basil Pesto

@herbimetal yeah I liked it on the cauliflower! I would slice the cauliflower into cauliflower steaks next time though 

@gatherwithsarah do you avoid eating carbs? Now I actually take less rice and eat more veggies 

@herbimetal just for the next couple of weeks I'm doing vegan keto (no sugar at all), I was eating horrible for a few months and just trying to get back into a healthy routine again 

@gatherwithsarah I see. How unhealthy can u go as a vegan tho? I feel I eat healthier as a whole 

@herbimetal I was literally eating a week's worth of mashed potatoes every day in one sitting as an example. 

@gatherwithsarah yeah that’s not balanced. Diets can easily become imbalanced, or have lots of junk food

@gatherwithsarah yeah good luck. I think the key is generally eating a healthy balanced diet. @sazzie went on a keto diet temporarily at one time too.

I quickly threw together Pesto Tofu by tossing tofu cubes in Vegan Kale, Cashew & Basil Pesto and then baking. I added some extra pesto after the tofu was done baking. This is definitely a new go-to for me!! Easy & Great on the Budget!!! One serving - 2oz - for one block of tofu = 4 blocks of tofu covered (if you want to use a little more than one serving, then it should be plenty for three blocks of tofu). OR bake the tofu cubes plain, then toss with 1oz of pesto after cooking to help spread the container for a week. #vegan #easyvegan #keto #tofu #traderjoes #budget #cheap

Edit: I'm putting it on a whole head of cauliflower and baking it!

WOW where has this been all my life?! This pesto is perfect and I wouldn’t change a single thing about it. It was awesome on sourdough bread and I can’t wait to put it on some pasta. It’s fresh tasting and bright green. There’s a lot in the container too!

Recently, we bought some of Trader Joe’s #[vegan](hashtag-5b61361bc215c949ed60ce93) #[pesto](hashtag-5b61361bc215c949ed60cf6d) with #[kale](hashtag-5b61361bc215c949ed60cd90) 🥬, #[basil](hashtag-5c39394e33a3a9efa9c2c688) 🌿, and #[cashew](hashtag-5c1aecad33a3a9efa95ac39f)s. Pretty creative! 😄 Usually, this pesto goes great with vegan pasta salad. However, today I tried pairing it with some #[cherrytomatoes](hashtag-5f38c8bd628adf118fe8bb0c) and vegan #[ravioli](hashtag-5eb756d6894f27487932ea72), which was simple but pleasant. ☺️ The pesto itself tastes pretty unique. The basil is very subtle, and it has a crisp and fresh taste from the kale which matches the cherry tomatoes nicely. If you are looking for a unique sauce which goes nicely with pasta, I’d definitely recommend this one. 😄🌱

Recently, we bought some of Trader Joe’s #vegan #pesto with #kale 🥬, #basil 🌿, and #cashews. Pretty creative! 😄 Usually, this pesto goes great with vegan pasta salad. However, today I tried pairing it with some #cherrytomatoes and vegan #ravioli, which was simple but pleasant. ☺️ The pesto itself tastes pretty unique. I’ve been loving this pesto for a long time!  It tastes so good.  Trader Joe’s always carries some of the greatest budget friendly/vegan options.  I would never even had guessed they put kale in it, unless it was printed on the container.  A great go-to pasta enhancement!  I love this stuff as a sandwich 🥪 spread as well.  Don’t forget to add your nutritional yeast for an even cheesier/nuttier flavor!
