This savoury and protein-packed salad came with grilled mushrooms, edamame beans, as well as pan-seared tofu coated with seaweed and sesame seeds. This salad was filled with energy-boosting grains and starchy vegetables, including quinoa, Job's tears barley, as well as grilled pumpkin wedges that were sweet and smoky.
