I had a bad Pad Thai not long ago. The noodles were a gluggy coagulated mess, the sauce was sticky and cloying, the few vegetables were sparse and limp. This dish was none of those things. The noodles were distinct and perfectly cooked, the sauce light but with a clear tamarind flavour that didn't overpower the mixed Asian greens, tofu, coriander, spring onion and crispy shallot which all had a freshness to them. This is how you do a good Pad Thai.
