This was the seventh dish in SHU’s 10-course vegan degustation set. This was a beautiful salad dish with a surprising amount of heat to it! The slices of fresh yellow Grandma heirloom tomato came on a little pool of loose miso mayonnaise. The mayo actually helped to cut through all the raw acidity of the tomato, finger lime, red onion, and radish. The beautifully pink pickled watermelon radish and red onion added a nice crunch to contrast with softness of the tomato. Hints of the smoky, burnt chilli came through here and there as earthy notes of interest. The citrus of the coriander stems and finger lime zested things up a bit too. The three broad beans there were tender and juicy but didn’t really add to the harmony of flavours, I felt. Overall, a lovely salad.
