Okay, my trip to Thailand is complete now 😌 #khaosoi is my favourite #noodle dish in the whole wide world, and that has everything to do with the contradistinction between the cooked and the #deepfried #crispy noodles 😋 This interpretation kind of maintained that balance, but crucially did so by swapping out the soft noodles for #tofuskin aka #yuba ☺️ Giving it the advertised 35g of protein. Everything else was solid, from the #tofupuffs to the #monkeyheadmushroom to the sweet and #spicy #chilli to the humble ingredient for which I have an unfathomable fondness - chopped raw #onion 😁 And served in a creamy broth - #heavenisaplaceonearth? 😌
